  1. How to liven up vegetables with a roast dinner, without adding loads of calories. I do brilliant potatoes but the rest is bland and boring.
  2. Try roasting parsnips in olive oil and drain well before serving. You could also roast peppers, courgettes, butternut squash etc.
    Cook carrots and parsnips and mash them together, perhaps add a little orange juice for extra flavour.
    A friend of mine cooks carrots in a little white wine, they taste good.
    Look in a cook book for vegetarian recipes and adapt them for your roasts.
    Sometimes I'll sprinkle lemon juice over my veg rather than have gravy, for a change.
