To store a ready supply of lemon wedges for drinks, fish and cooking, slice and deseed lemon slices, roll one by one into a long strip of freezer wrap and freeze. Individual slices don't stick to each other, defrost in minutes and are even better in drinks than flabby fresh ones.
A fantastic way to always have lemon slices is to buy them when cheap, chop them into slices and place on atray and freeze. This has the double effect of having fresh lemon available and cooling the drink without diluting it.
