both Husband and Mother-in-law like me to roast them for about an hour in an aluminium foil parcel, with a tiny knob of butter, some honey, and maldon salt. of course i oblige!
Put the carrots into a saucepan with NO WATER AT ALL.
Put a large dollop of butter on the top (a quarter of one of those standard UK butter blocks) and two dessert spoons of sugar.
Cover the saucepan with a lid, and put it on the lowest hob heat possible for about 30 minutes, checking it occasionally to make sure nothing's burnt.
The carrots will poach in the butter and their own liquid, and start to caramelise in the sugar.
Not one for the health freaks, admittedly, but given that everything enjoyable is either illegal, immoral or fattening, here's to enjoyment!
I use orange juice to simmer carrots in, once cooked (Not overcooked!) gently coat carrots with some runny honey, season. More healthy than butter and less boring than just using water to cook with!
Blanch carrots for 7 minutes in water, add some brown sugar to water. Strain carrots, have firm cooked bacon bits on side ready for skillet. Place carrots in skillet with butter, add maple syrup, then brown sugar then add bacon. Very nice contrast in flavor.
