Boil and drain potatoes.
Push potatoes thru a fine sieve using back of wooden spoon into a large bowl.
Gently fold thru softened butter and hot milk til light and fluffy.

How to make great mashed potatoes

Boil potatoes to death, drain and then mash with a large chunk of butter, milk and white pepper. Don't puree. Add cheese, mustard, horseradish or mint sauce depending on what you're serving them with. If you want garlic potatoes, boil a large clove of garlic per potato or add roasted cloves pre-mashing for a smooth flavour.

Steam the potatoes with garlic cloves then mash them with the garlic and a bit of butter, milk, salt and pepper.

boil salted potatoes until you can stick a fork in very easily drain and mash with just butter mmmmmmmmmmmm gorgeous

when the potatoes are cooked and drained, toss over very low heat, to dry and fluff them up. mash and add butter, then push it all to the sides and add milk into the middle to heat. when hot mix into the potato mixture and you will have lovely fluffy mash.

Towards the end of the mashing process, add approx 1 teaspoon of cold water, mash a little more, fantastic. I don't know how it works but it does.
