Boil and drain potatoes.
Push potatoes thru a fine sieve using back of wooden spoon into a large bowl.
Gently fold thru softened butter and hot milk til light and fluffy.
flavoursome additions: basil - creamed corn - tuna - sun-dried tomatoes - roasted garlic are all yummy.
Work quickly, never allowing it to become cold.
Boil potatoes to death, drain and then mash with a large chunk of butter, milk and white pepper. Don't puree. Add cheese, mustard, horseradish or mint sauce depending on what you're serving them with.
If you want garlic potatoes, boil a large clove of garlic per potato or add roasted cloves pre-mashing for a smooth flavour.
when the potatoes are cooked and drained, toss over very low heat, to dry and fluff them up. mash and add butter, then push it all to the sides and add milk into the middle to heat. when hot mix into the potato mixture and you will have lovely fluffy mash.
