so tasty and quick
fry off a red onion and garlic
add some chopped carrots
then a tin of plum tomatoes
then add a chopped pepper
then season with salt and pepper
add a squirt of ketchup, some lea and perrins and some balsamic vinegar
add some dried oregano and basil
simmer for about 20 mins
serve with pasta
or it makes a really good pizza base sauce
For a really quick one, just skin some tomatoes by pouring boiling water over them and peeling. Then chop them roughly, chuck them into a saucepan with butter and an onion (optional), bring to the boil and puree if you want to. SO easy and tasty.
For pasta sauces...
Heat olive oil in a pan, chop two large onions and fry in oil for 3 minutes, chop garlic and when onion is browning add garlic.
Add mince and fry until brown, about 5 minutes. Open two small tins of tomato puree and one can of chopped tomato and when meat is cooked pour all into the pan. Fill the large can with hot water and add to sauce.
Add sauce, origano and basil and two teaspoons of sugar to combat acidity, along with any other veg is wanted.
Allow to simmer for at least an hour.
skin toms and roughly chop,
add to pan with salt and pepper and reduce,
serve on half a crusty toasted baggette with olive oil.
simple and delicious for breakfast with fresh coffee!
I use Tesco's original pasta sauce as a dip for my chips as it tastes ten times better than tomato sauce, is incredibly cheap and is much better for you!
