Serves 4 ( or 2 if greedy!)
4 wooden skewers (bbq type)
20 big juicy strawberries
Half a pack of Thorntons chocolate sprinkles (the pack for Chocolate fountains)
Thread 5 strawberries onto the middle of each skewer. Place an inch apart on a flat tray pre-covered in foil. Melt the chocolate, not too hot, and suspending each skewer one by one over the melted chocolate, use a spoon to cover the strawberries with the chocolate, allowing excess to drip back into pot. Place on foil and allow to cool and set. If you've chocolate left, spoon it onto skewers as they are on the foil. For special occasions, drizzle white melted choc over dark, looks fab. These are wicked.
ALWAYS KEEP A GOOD QUALITY ICE CREAM IN FREEZER AND MELT A MARS BAR IN MICROWAVE WITH A LITTLE MILK OR BRANDY POUR OVER ICECREAM YOU CAN SPRINKLE OVER SOME CHOPPED NUTS IF YOU LIKE. THIS CHCOLATE SAUCE CAN BE USED WITH ICECREAM AND A TIN OF PEARS AS WELL.

Line a cake tin with a removeable base with cling film.
Crush a handful of amaretti biscuits and place inside tin.
Melt a large (100g) bar of plain chocolate with 2 teasp of golden syrup and a slug of white rum - i do this in 30 sec bursts in the microwave. Allow to cool slightly, while lightly whipping 500ml double cream. Fold together, pour onto biscuits. Chill in fridge a few hours (or keep up to a week), turn out, eat!!! Delicious with fresh raspberries or strawberries.
Here's a few:
Keep frozen berries on hand. Cook them with some sugar and a bit of corn starch mixed with water. Spoon over vanilla ice cream.
Wash some strawberries. Serve them in a bowl with a small bowl of sour cream and small bowl of brown sugar. Dip the strawberry into the sour cream and then the brown sugar. Tastes just like cheesecake!
Peel and chop two mangos (or other fruit.) Put in a frying pan with one tablespoon of butter and three tablespoons of brown sugar. Cook until slightly soft. Then take 1/4 cup of rum and pour into the pan. Light this on fire (IMPORTANT: DO NOT HAVE YOUR STOVE FAN ON FOR THIS!) Step back and let the flames die down. Serve with french vanilla ice cream.
i saw this on jamie oliver's show a while ago :D its great for summer bbqs! make a hole in a whole watermelon and stick a funnel in, then pour vodka into it from time to time.. the watermelon absorbs the vodka and if u keep it in the fridge it will be the most refreshing dessert (only for the adults though!) a good one for the kids is fruit salad with a scoop of top quality vanilla ice cream - healthy and yum
Melt some chocolate (decent variety) in a bowl either over simmering water (try not to let the water touch the bowl) or in a microwave oven. Stir it until its smooth without lumps. In another dish put marshmallows, slices of fruit - apples, bananas, grapes etc. Give out forks and let everyone dip marshmallows or fruit into the melted chocolate. Very yummy and a useful way of getting some fruit into children (and adults) who may not eat it otherwise.
Buy ready made meringues and break them into small pieces. Whip up a carton of double cream.
Fold the meringue pieces into the cream and serve. Gobsmackingly gorgeous!!!
Get a tin of apricot halves, put drain them and put them in an oven tin. Add a dollop of butter in the middle, mix some alcohol with the juice and some almond essence, and pout it over. Sprinkle brown sugar and cinamon and then grill for about 5 mins until bubbly. Serve with cream or ice cream and make sure everyone gets a good go at the gravy. I call this 'pineapple surprise' the surprise part is obvious....
Slice a chocolate swiss roll into 1" rings and put in the bottom of a glass bowl. Pour on 2 tins of black cherry pie filling. Top off with a large carton or extra thick double cream. Grate chocolate on the top :-) These can also be made straight into individual serving dishes.
Instead of the mars bar you could add any fruit puree (just cook fruit in a little water till it is soft, drain and liquidise or mash thoroughly) and add it to the softened ice-cream. also you could add a big splash of any liqueur, ie grand marnier, creme de cassis etc. etc.too. Refreeze the ice-cream until about 2o minutes before you want to eat it, according to the size - more time for a big container.

Cube some watermelon and freeze it = instant sorbet.
Drizzle some balsamic vinegar over strawberries. Yes, this sounds weird, but it's surprisingly good; most folks don't realise that's what they are eating.
Frozen berries with hot white chocolate sauce!
Buy a selection of smallish berries eg blueberries, raspberries (If using big berries like strawberries, cut them into quarters first). Spread them out on a baking tray and stick them in the freezer for at least two hours
Make the hot white chocolate sauce by melting 100g of white chocolate in a bowl over a pan of boiling water (or short burst in the microwave). Stir in a few spoons of double cream and a tablespoon of butter
Serve the frozen berries in individual bowls and the hot white chocolate sauce in a jug (or individual jugs if you're feeling really posh!)

Make a quick chocolate sauce by melting some chocolate and cream over the hob, place a cookie or two in a bowl, add two scoops of ice cream, top with chopped bananas and pour over chocolate sauce.
Takes 5 mins!
Poach halved pears, peaches, figs or the like in white or red wine for a minute or two and serve with good quality vanilla ice cream. The fruit softens, the wine becomes a yummy syrup and the ice cream makes it last a little longer.
If you have to pull together a fast dessert for someone how can't have refined sugar, try two tbs of organge juice in a wine class and then 4tbs of plain yoguart and anohter layer of fruit or joice and 2 tbs of yougart.
Also for the sugar free crowd, try mixing almost melted sugar free chocolate with plain yogart.
I fast treat for kids, mix royal jelly with yogart, its sweet and loaded with vitamins.
Easy Eton mess. Buy a tub of mini Meringues , some strawberries and double cream. Crush the meringues in a bowl, whip cream and pour crushed meringues in , chop strawberries and pour into merainge/ cream mixture. Combine well and spoon into glasses finishing with a halved starwberry and grated chocolate. Takes about 3 minutes (if you have an electric whisk!)
